fresh mushrooms, chopped

red pepper, finely chopped

green onion, chopped

bean sprouts
- 1/2

frozen peas
- 1/4
cup
sesame oil
- 4

cooked rice
- 3
tablespoon
soy sauce

Directions:

Cook ham sausage according to package directions. Drain and cut into 1/2-inch pieces. Set aside. Heat 1 tablespoon vegetable oil in large skillet, pour in eggs and stir-fry for 1 minute. Remove from pan, cut into small pieces and reserve. Add remaining tablespoon vegetable oil to pan and saute mushrooms and red pepper for several minutes, add green onion, bean sprouts and peas. Stir-fry several minutes. Add sesame oil to pan, reduce heat and add rice, cooked ham sausage and cooked egg. Stir until rice is heated, add soy sauce. Combine well and serve. If desired, serve with additional soy sauce. Makes: 4 to 6 servings.
